5. Grilled cold noodles

  Known as kaolengmian in Chinese, the grilled cold noodles were originally a quick street snack in Northeast China, which has now spread to many other places. In the capital city of Beijing, for example, it's not rare to encounter a cart or a street stand selling the noodles.

  The cooking process is simple. A thin, pre-made sheet of dough is placed on a sizzling flat skillet before an egg is cracked and spread over it. It's then sprinkled with scallions, chopped onions and cilantro.

 7. Malatang

  Malatang literally means numb, spicy and hot in Chinese. In malatang restaurants, or stalls, skewers of meat, vegetables, bean curd products and many other foods are put on shelves to be chosen by consumers. The selected ones are then cooked in boiling soup with fiery sauce.

  麻辣烫就是又麻又辣又烫,客人们随意挑选一串串食材,放入汤中汆熟,夜宵当然少不了它。




我吃过最好吃的夜宵饭就是当消防兵时出警归来的炉果糕点。
那个困难的年代,虽然我从小住在省城,但是吃饱饭就是很心滿意足了。夜宵是非份之想,二十多斤的居民定量是钢一样的王八屁股龟腚(规定)。别说没有钱了就是有钱也是买不到的,粮票也是没有的。
后来,我当兵每到夜晚如果出火警,就可以得到一份加餐。东北地区烧煤晚间炊事员做不了饭,所以,规定每一次大一点的任务返回来就吃炉果。
这个糕点买来也不容易,先要去找副食品商店的负责人批准,在由店员到店称出来。特别是冬天谁都不愿意到店里卖这炉果。后来有一位老兵气急了,因为在店门口等了一个多小时,冻的不行了。一气之下拿起破折釜头把锁头砸了下来,惊动了商业局领导。最后决定晚上安排一人值班卖点居民需要的食品。
如今看起来很可笑,但是年轻人消化快,特别是冬天零下三四十度的温度肚里空空,就想店记这一宵夜的补充。每当出警回来喝上一杯热热的红茶,大口吃上甜美的糕点,讲述着火场上的笑话,特别是新兵在大火扑灭中的洋相,那真是我们最开心的事情。最后班长会说都少吃点给没有出警的战友留下两包。
我没有想到的事情是我一吃就吃了八年,后来调到机关工作。至今为止我还记得曾经的宵夜是那么好吃,经常购买一斤回家,但是找不到当年那个味道。开始以为是商品的改良,实际上是在寻找那个无私奉献的青春岁月。





应该是九几年的广州,文德路、珠光路、大沙头、滨江路海珠桥脚附近、童心路。。。随便找一家路边的大排档,吃宵夜都不错!




那时大叔刚出来工作不久,上夜班那周,总有一两天会和同事下班后去吃宵夜!干炒牛河、紫苏炒石螺和珠江啤酒是广州宵夜三宝,几乎是每桌必点!




如果是发工资那个星期,肯定要加菜,“炸傻鳝”(干炸黄鳝,洒点椒盐)是每月一次的心头好,还有就是生炒菜心或椒丝腐乳通菜,在家里永远炒不出大排档的“镬气”(猛油大火)!如果在炎热的夏天,怕啤酒喝多了会撑胃,那么来一瓶冰镇的桂花陈酒,便是一顿完美的宵夜了!




时光荏苒,城市的发展,可以坐在人行道或骑楼底的大排档已基本消失,人到中年的大叔也慢慢地与宵夜绝缘了,除了没有熟悉的环境,更多的是不复轻狂,还有就是食物远不如以前好吃了!




在过去的岁月里,年夜饭就是水饺!




我吃过的最好吃的宵夜是母亲给我煮的猪肠灌糯米,首先把猪肠清洗干净,然后用水过一遍待用,将糯米用水泡一泡,再用调料调理好灌到猪肠里,用砂罐文火煨,那是我吃过最美味的宵夜,至今都难以忘记,不过我也就吃过一次,再也没有吃过了。
