在白沙古镇,门前有堆柴的,一定是做豆腐的人家。

In Baisha Ancient Town of Liuyang city, those with piles of firewood in front of their yard must be the homes of tofu makers.

白沙古镇位于浏阳东部,地处大围山腹地,是浏阳河的发源地,至今已有800多年的历史。

Baisha Ancient Town is located in the eastern part of Liuyang city, in the hinterland of Dawei Mountain, the birthplace of Liuyang River which has a history of more than 800 years.

这里曾经是江西湖南两省的交通要道,是湘东的重要门户。

It was once a major transportation route between Jiangxi and Hunan provinces and a key area in eastern Hunan.

在大革命时期,素有小南京之称。

During the National Revolution Period, it was known as a microcosm of Nanjing.

白沙豆腐作为浏阳市非物质文化遗产,延续了百年的手艺与味道。

As an intangible cultural heritage of Liuyang City, Baisha Tofu has continued its craftsmanship and taste of a hundred year.

来到这里,碾一碗琼浆,舀一勺玉团,品一桌人间烟火,体验一场豆腐盛宴。

When come to here, grind a bowl of sweet pulp, scoop a spoon of sticky soybean juice.

承载的市井味,是白沙古镇沉浸式民俗体验的灵魂所在。

The flavor of the city is the soul of Baisha Ancient Town and it’s the soul of the immersive folklore.

俗话说豆腐好吃磨难推。

As the old saying goes, tofu is delicious but it’s hard to push through the grind.

浏阳市白沙豆腐第四代非遗传承人李雪阳说,正宗的白沙豆腐秘密在于——豆好、水好、人品好。

Li Xueyang, the fourth generation inheritor of intangible cultural heritage of Baisha Tofu in Liuyang City, said“the secret of authentic Baisha Tofu lies in good beans, high quality of water, and nice people.”

在磨浆环节,要严格控制转速与温度,以保全豆腐纤维组织不被破坏。

In the grinding process, the speed and temperature is strictly controlled to keep the dietary fiber of tofu from being destroyed.

得益于大围山脚下,天然无污染的自然环境,造就了品质优良的黄豆。

Thanks to the natural and pollution-free natural environment, at the foot of Dawei Mountain, excellent quality soybeans have been cultivated.

优质的黄豆与海拔1,500多米的大围山泉水,按照1:10的比例浸泡交融。

The high quality soybeans are soaked in a 1:10 ratio with the spring water of Dawei Mountain, which is more than 1,500 meters above sea level.

沿袭白沙人祖祖辈辈传承下来的豆腐技艺。再经冲、滤渣、煮浆、点卤、压胚、分切等11道工序。

Inherit from the ancestral tofu techniques of the Baisha people. The bean curd is then processed through 11 steps, including brewing, filtering, boiling, brine, pressing, and cutting.

这样制作出来的白沙豆腐,口感细腻鲜嫩,不负浏阳一绝的盛名。

In this way, the delicate and tender Baisha Tofu is made that lives up to its reputation as one of the best in Liuyang.

一方豆腐包含万千滋味——酸甜苦辣咸,煎炸烹煮炖。

One recipe for tofu contains thousands of flavors - sour, sweet, bitter, spicy, salty, frying, cooking and stewing.

千味万味,始终有原味。

There are thousands of flavors, but it always retains its original taste.

白沙豆腐不仅是传承的美食技艺,更是萦绕于心头的家乡味道。

Baisha tofu is not only a culinary skill that has been passed down, but also a memory of hometown that lingers in the heart.
